Daroca, Zaragoza
Six generations of pastry makers in Daroca, Aragón, since 1874.
Six generations on, still made with the best ingredients from around Daroca.
Pastelerías Manuel Segura is a family pastry house in Daroca, in the province of Zaragoza. The Segura family opened the business in 1874, and six generations later they still make their sweets in their own workshop in Daroca, with ingredients from the area around it.
Their frutas de Aragón are candied pear, apple, plum, cherry, apricot and peach, each piece coated in dark chocolate with 70 percent cocoa.
Frutas de Aragón is a traditional sweet that many pastry houses make, so the details matter. Here the fruit is first-quality and candied slowly, which keeps its natural juiciness, aroma and colour. The coat is a thin layer of dark chocolate at 70 percent cocoa, which balances the sweetness of the fruit instead of adding to it. Six fruits go into the assortment, and every product passes the workshop's quality checks before it is sent out. What sets this house apart is how long it has been doing it: the same family, in the same town, since 1874, with natural ingredients from the area around Daroca.
Daroca is also home to the family's pastry museum, where guided visits show the tools six generations of pastry makers have used. The house has won the Premio de Aragón Alimentos, and we are glad to bring their frutas de Aragón into our boxes.
